Ingredients
  

Vegetables
  • 2 medium eggplants diced
  • 1 pound shrimp peeled and deveined
  • 1 unit onion chopped
  • 2 cloves garlic minced
  • 1 can (14.5 oz) oz diced tomatoes drained
  • 1 cup breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic in olive oil until softened.
  3. Add eggplant and cook until tender, then stir in shrimp, tomatoes, and spices; cook until shrimp are pink.
  4. Layer mixture in a greased dish, top with breadcrumbs and cheeses.
  5. Bake for 25-30 minutes until bubbly and golden.

Notes

For a spicier flavor, add more red pepper flakes.
