Ingredients
  

Vegetables
  • 2 medium eggplants sliced
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • to taste salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants and brush with olive oil, then bake for 15 minutes.
  3. In a pan, sauté garlic in olive oil until fragrant.
  4. Layer eggplant slices in a baking dish, top with tomato sauce and cheese, then repeat layers.
  5. Bake for 30 minutes until bubbly and golden.

Notes

You can add herbs like basil or oregano for extra flavor.
