Method
- Preheat oven to 400°F (200°C). Toss vegetables with oil, salt, pepper, thyme; roast 25-30 mins.
- Cook ground meat until browned, then add onion and garlic; sauté until translucent.
- Stir in broth, quinoa, cinnamon; bring to boil, then simmer 15 mins until cooked.
- Mix cranberries and walnuts into quinoa; serve with roasted vegetables.
