Ingredients
  

Vegetables
  • 2 lbs butternut squash, peeled and cubed
  • 1 lb Brussels sprouts, trimmed and halved
Chicken
  • 1 lb chicken thighs, bone-in and skin-on
Seasonings and liquids
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 cup chicken broth
  • 1/4 cup maple syrup

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, salt, pepper, garlic powder, and thyme.
  3. Season chicken thighs with salt, pepper, and garlic powder; place in baking dish.
  4. Arrange vegetables around chicken, pour broth and maple syrup over everything.
  5. Bake for 35-45 minutes until cooked through and tender.
  6. Rest a few minutes before serving. Enjoy!
