Ingredients
  

Protein
  • 6 oz salmon fillet
Oil
  • 1 Tbsp olive oil
Pasta
  • 8 oz refrigerated tortellini
Dairy
  • 1/3 cup cream cheese
  • 3 Tbsp mozzarella
Vegetables
  • 1 small tomato, chopped
  • 1/2 zucchini zucchini, chopped
Herbs & Spices
  • 1/2 tsp dill, dried
  • 2 Tbsp fresh chopped basil
  • 2 cloves garlic, minced

Method
 

  1. Prepare vegetables and cut salmon into bite-sized pieces.
  2. Heat olive oil in a large pan, cook salmon with dill and tomato for 3-4 minutes.
  3. Add cream cheese, season with pepper, and stir in water to make a sauce.
  4. Mix in tortellini and cook for 3-4 minutes until heated through.
  5. Add garlic, basil, zucchini, and mozzarella; stir until combined. Serve immediately.

Notes

For extra flavor, top with Parmesan cheese if desired.
