  • 6 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped sun-dried tomatoes (oil-packed, drained) oil-packed, drained
  • 1/4 cup chopped Kalamata olives
  • 2 tablespoons chopped fresh spinach
  • 1 clove garlic, minced
  • 1/4 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C). Grease muffin tin with olive oil spray.
  2. Whisk eggs and milk in a bowl until combined.
  3. Add feta, sun-dried tomatoes, olives, spinach, garlic, and oregano. Season with salt and pepper.
  4. Stir gently to distribute ingredients evenly.
  5. Pour mixture into muffin tin, filling each cup 3/4 full.
  6. Bake for 20-25 minutes, until set and golden brown.
  7. Cool in tin before removing.
  8. Serve warm or at room temperature. Store in refrigerator for up to 3 days.
