Method
- Preheat oven to 375°F (190°C). Grease muffin tin with olive oil spray.
- Whisk eggs and milk in a bowl until combined.
- Add feta, sun-dried tomatoes, olives, spinach, garlic, and oregano. Season with salt and pepper.
- Stir gently to distribute ingredients evenly.
- Pour mixture into muffin tin, filling each cup 3/4 full.
- Bake for 20-25 minutes, until set and golden brown.
- Cool in tin before removing.
- Serve warm or at room temperature. Store in refrigerator for up to 3 days.
