  • 2 cups mashed sweet potatoes (cooked and cooled)
  • 1/2 cup almond butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round pan.
  2. Mix sweet potatoes, almond butter, honey, and eggs until smooth.
  3. Add spices, salt, baking soda, and vanilla; stir well. Fold in nuts if using.
  4. Pour batter into pan and bake for 30-35 minutes. Cool before serving.
