Method
- Grind oats if not pre-ground.
- Mix yogurt with baking soda until bubbly.
- Add eggs and mix well.
- Stir in sugar, vanilla, oats, and salt until combined.
- Cook pancakes on a greased pan until bubbles form and edges are set, then flip.
- Serve warm with toppings of choice.
Notes
Use a non-stick pan for easier flipping and less oil.
