  • 1 cup all-purpose flour or gluten-free flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon (optional)
  • Pinch salt
  • as needed butter or oil for cooking
  • optional almond flour or gluten-free flour blend substitute for all-purpose flour
  • as desired chopped walnuts, pecans, or chia seeds
  • as desired honey, maple syrup, or stevia additional sweeteners
  • optional cocoa powder or lemon zest
  • as needed vegan cottage cheese alternatives and flax eggs for dairy-free/vegan version

Method
 

  1. Mash bananas until smooth, then mix with cottage cheese until creamy.
  2. Whisk in eggs, vanilla, and cinnamon until fragrant.
  3. Combine dry ingredients in a separate bowl, then fold into wet mixture.
  4. Heat a greased skillet over medium heat, pour 1/4 cup batter, cook until bubbles form, then flip and cook until golden.

Notes

For extra fluffiness, do not overmix the batter.
