Method
- Add yogurt, eggs, oats, syrup, baking powder, vanilla, salt, and vinegar to a blender.
- Blend until smooth and thick but pourable.
- Preheat a nonstick skillet over medium heat and grease well.
- Pour batter, cook until golden and bubbles form, then flip and cook other side.
- Repeat with remaining batter, greasing pan as needed.
- Serve with maple syrup and toppings or store for later.
Notes
For extra fluffiness, add a splash of vinegar to the batter.
