Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes peeled and chopped
  • 3 tablespoons unsalted butter melted
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 large eggs separated
  • 1/4 cup milk

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Boil, peel, and mash sweet potatoes until smooth.
  3. Mix in melted butter, sugar, salt, cinnamon, nutmeg, vanilla, and milk.
  4. Beat egg whites until stiff peaks form, then fold into the mixture.
  5. Pour into a greased dish and bake for 25-30 minutes.

Ensure egg whites are folded gently to keep the souffle airy.
