Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes boiled or baked until tender
  • 3 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 3 large eggs, separated
  • 1/4 cup milk

Method
 

  1. Preheat oven to 375°F (190°C) and grease a soufflé dish.
  2. Peel, mash, and mix sweet potatoes with butter, sugar, spices, vanilla, and milk.
  3. Beat egg whites until stiff peaks form, then fold into the sweet potato mixture.
  4. Pour into the dish, smooth the top, and bake for 25-30 minutes until puffed and golden.

Notes

Serve immediately for best fluffiness.
