Ingredients
  

Fondue
  • 1 clove garlic halved
  • 1 cup dry white grape juice
  • 1 tablespoon lemon juice
  • 8 ounces Gruyere cheese shredded
  • 4 ounces Emmental cheese shredded
  • 1 tablespoon cornstarch
  • 1/4 teaspoon ground nutmeg
  • Pinch white pepper
Dipping
  • Crusty bread cubed
  • Apples cubed (optional)
  • Cooked broccoli florets (optional)

Method
 

  1. Rub fondue pot with garlic; discard.
  2. Heat grape juice and lemon juice until simmering.
  3. Toss cheeses with cornstarch.
  4. Reduce heat; add cheese mixture, stirring until melted and smooth.
  5. Stir in nutmeg and white pepper.
  6. Serve with bread, apples, and/or broccoli. Keep warm.

Notes

For a richer flavor, use a blend of Gruyere, Emmental, and Appenzeller cheeses.
