Ingredients
  

Eggs and Dairy
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
Vegetables and Protein
  • 1 cup diced bell peppers
  • 1 cup cooked and crumbled beef sausage or turkey bacon
  • 1 cup diced potatoes (cooked or frozen)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Tortillas
  • 8 large flour tortillas
Optional toppings
  • as desired salsa or hot sauce for serving

Method
 

  1. Whisk eggs and milk in a bowl. Add bell peppers, sausage, potatoes, cheese, salt, and pepper; stir.
  2. Cook the mixture in a skillet over medium heat until eggs are set, about 5-7 minutes. Cool slightly.
  3. Spoon filling onto tortillas, fold sides, and roll up. Wrap each burrito tightly and freeze.
  4. Label and store in the freezer. Reheat in microwave or oven when ready to serve.
