Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes boiled or baked until tender
  • 3 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 3 large eggs, separated
  • 1/4 cup milk
  • 1/4 teaspoon cream of tartar

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Peel and mash cooked sweet potatoes.
  3. Mix mashed sweet potatoes with butter, sugar, salt, spices, vanilla, and milk.
  4. Fold in beaten egg yolks, then gently fold in whipped egg whites.
  5. Pour into a greased dish and bake for 30-35 minutes until puffed and golden.

Notes

Ensure egg whites are whipped to stiff peaks for a light texture.
