  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
Wet ingredients
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
Frosting ingredients
  • 1 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
  2. Mix dry ingredients in a bowl. In another bowl, beat sugars and oil, then add pumpkin, eggs, and vanilla.
  3. Combine wet and dry mixtures. Pour into pan and bake for 25-30 minutes.
  4. Cool completely, then beat cream cheese and butter, add powdered sugar and vanilla to make frosting.
  5. Spread frosting over cooled cake, cut into squares, and serve.
