Ingredients
  

Dry Ingredients
  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Chocolate and Butter
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla
Chocolate Chips
  • 85 g dark or milk chocolate chips

Method
 

  1. Preheat oven to 160ºC (320ºF). Line a baking tray with parchment paper.
  2. Melt chocolate and butter over simmering water, then stir in vanilla.
  3. Whisk eggs, caster sugar, and Demerara sugar until light and fluffy, about 5 minutes.
  4. Sift dry ingredients and fold into the egg mixture with chocolate chips.
  5. Gently fold in melted chocolate mixture, then spoon batter onto tray. Bake for 12-14 minutes.
  6. Cool, sprinkle with sea salt if desired, then transfer to a rack to cool completely.

Notes

For extra flavor, sprinkle sea salt on top before cooling.
