Method
- Preheat oven to 160ºC (320ºF). Line a baking tray with parchment paper.
- Melt chocolate and butter over simmering water, then stir in vanilla.
- Whisk eggs, caster sugar, and Demerara sugar until light and fluffy, about 5 minutes.
- Sift dry ingredients and fold into the egg mixture with chocolate chips.
- Gently fold in melted chocolate mixture, then spoon batter onto tray. Bake for 12-14 minutes.
- Cool, sprinkle with sea salt if desired, then transfer to a rack to cool completely.
Notes
For extra flavor, sprinkle sea salt on top before cooling.
