  • 1 pound large sea scallops patted dry
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1/4 cup dry white grape juice optional
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • to taste Salt and pepper
  • Lemon wedges for serving

Method
 

  1. Pat scallops dry; season with salt and pepper.
  2. Heat olive oil in skillet over medium-high heat.
  3. Sear scallops 2-3 minutes per side; do not overcrowd.
  4. Remove scallops and set aside.
  5. Reduce heat, melt butter, add garlic, cook 30 seconds.
  6. If using, add grape juice and simmer for 1 minute.
  7. Stir in lemon juice and parsley; season with salt and pepper.
  8. Return scallops to skillet and toss to coat.
  9. Serve with lemon wedges.

Notes

Be sure to pat the scallops completely dry before searing to get a good crust.
