Ingredients
  

Pasta
  • 225 g linguine or fettuccine
Meat
  • 300 g sirloin steak (or ribeye/new york strip)
Aromatics & Fats
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Garnishes
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons grated parmesan (optional)
Pasta Water
  • 1/2 cup reserved pasta water

Method
 

  1. Cook pasta in salted boiling water until al dente, then drain and reserve 1/2 cup pasta water.
  2. Pat steak dry, season with salt and pepper, then sear in olive oil over medium-high heat for 3-4 minutes per side. Rest for 5-10 minutes.
  3. Melt butter in the same pan, add garlic, and sauté for 1-2 minutes. Stir in red pepper flakes.
  4. Add cooked pasta to the pan, toss with garlic butter, adding reserved pasta water to loosen sauce if needed.
  5. Slice rested steak thinly against the grain, then serve pasta topped with steak, parsley, and Parmesan if desired.

Notes

Use high-quality steak for best flavor. Adjust red pepper flakes to taste for spice.
