- Cook pasta in salted boiling water until al dente, then drain and reserve 1/2 cup pasta water.
- Pat steak dry, season with salt and pepper, then sear in olive oil over medium-high heat for 3-4 minutes per side. Rest for 5-10 minutes.
- Melt butter in the same pan, add garlic, and sauté for 1-2 minutes. Stir in red pepper flakes.
- Add cooked pasta to the pan, toss with garlic butter, adding reserved pasta water to loosen sauce if needed.
- Slice rested steak thinly against the grain, then serve pasta topped with steak, parsley, and Parmesan if desired.
Notes
Use high-quality steak for best flavor. Adjust red pepper flakes to taste for spice.
