Ingredients
  

Cream Cheese
  • 6 oz cream cheese, cold
Sugar
  • 3 tbsp granulated white sugar
  • 6 tbsp granulated white sugar
Vanilla
  • 1/2 tsp vanilla
Spices
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground allspice
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground cloves
Flour Mixture
  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground ginger
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 tsp baking soda
Butter
  • 3/4 cup unsalted butter, softened
Brown Sugar
  • 3/4 cup light brown sugar, packed
Egg Yolks
  • 2 egg yolks egg yolks, at room temperature
Vanilla Extract
  • 1 tsp vanilla
Molasses
  • 1/3 cup unsulphured molasses

Method
 

  1. Cream together the cream cheese and sugars until smooth.
  2. Add egg yolks, vanilla, and molasses; mix well.
  3. In a separate bowl, whisk together flour, spices, salt, and baking soda.
  4. Gradually add dry ingredients to wet mixture, then chill dough.
  5. Shape into cookies and bake at 350°F (175°C) for 12 minutes.
