Ingredients
  

Vegetables
  • 1 medium spaghetti squash
  • 1 block feta cheese 8 oz
  • 1 cup cherry tomatoes halved
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • to taste Salt and pepper Salt and pepper
  • for garnish Fresh basil Fresh basil

Method
 

  1. Preheat oven to 400°F (200°C). Cut squash in half and scoop seeds.
  2. Place squash cut-side up on a baking sheet. Mix cherry tomatoes, olive oil, garlic, oregano, salt, and pepper.
  3. Spoon tomato mixture into squash halves, top with feta, and drizzle with olive oil.
  4. Bake for 40-50 minutes until tender. Scrape squash into strands and mix with feta and tomatoes.
  5. Garnish with fresh basil before serving.
