- Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
- Hull and slice strawberries, thinly slice red onion, and chop fresh mint leaves.
- Arrange mixed greens in a bowl. Top with strawberries, pecans, red onion, feta, and mint.
- Drizzle with dressing and toss gently to combine. Serve immediately.
