Ingredients
  

Salad
  • 6 cups fresh mixed greens washed and thoroughly dried
  • 2 cups fresh strawberries hulled and sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup pecans roughly chopped
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat oven to 350°F. Toast pecans for 5-7 minutes until fragrant and lightly browned. Cool.
  2. Whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
  3. Hull and slice strawberries, thinly slice red onion, and chop fresh mint leaves.
  4. Arrange mixed greens in a bowl. Top with strawberries, pecans, red onion, feta, and mint.
  5. Drizzle with dressing and toss gently to combine. Serve immediately.

Notes

For a vegan option, substitute the feta cheese with a plant-based alternative.
