Ingredients
  

Chicken
  • 4 small chicken breasts about 1 1/4 pounds
Marinade
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
Bowl Ingredients
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
  • Tzatziki sauce made with Greek yogurt, grated cucumber, garlic, and fresh dill

Method
 

  1. Whisk olive oil, lemon juice, and seasonings in a bowl.
  2. Pound chicken and marinate for at least 30 minutes.
  3. Make tzatziki by mixing yogurt, cucumber, lemon juice, olive oil, garlic, salt, and dill.
  4. Cook rice/quinoa and chop vegetables.
  5. Air fry chicken at 380°F for about 10 minutes until 165°F.
  6. Slice chicken and assemble bowls with rice/quinoa, veggies, chicken, and tzatziki.

Notes

Adjust the amount of tzatziki sauce to your liking for added flavor and creaminess.
