Method
- Whisk olive oil, lemon juice, and seasonings in a bowl.
- Pound chicken and marinate for at least 30 minutes.
- Make tzatziki by mixing yogurt, cucumber, lemon juice, olive oil, garlic, salt, and dill.
- Cook rice/quinoa and chop vegetables.
- Air fry chicken at 380°F for about 10 minutes until 165°F.
- Slice chicken and assemble bowls with rice/quinoa, veggies, chicken, and tzatziki.
