  • 1 cup quinoa
Legumes
  • 1 can black beans drained
Vegetables
  • 1 bell pepper bell pepper diced
  • 1 onion onion chopped
Spices & Broth
  • 2 tsp cumin
  • 1 tsp chili powder
  • 2 cups vegetable broth
Garnish
  • Fresh cilantro cilantro for garnish

Method
 

  1. Rinse quinoa and cook in vegetable broth until liquid is absorbed, about 15 minutes.
  2. Sauté onions and bell peppers until tender.
  3. Stir in black beans, cumin, and chili powder; cook for 5 minutes.
  4. Assemble bowls with quinoa, veggie-bean mixture, and garnish with cilantro.
