Ingredients
  

Protein
  • 4 pieces boneless (skinless chicken breasts or thighs)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 California avocados sliced
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded mozzarella or Monterey Jack cheese
Toppings
  • chopped cilantro, balsamic glaze, diced red onion

Method
 

  1. Marinate chicken with olive oil, lime juice, garlic, paprika, cumin, salt, and pepper for 10 minutes.
  2. Preheat grill to medium-high heat and cook chicken for 6-8 minutes per side until fully cooked.
  3. While grilling, prepare avocado slices and halved cherry tomatoes.
  4. Top cooked chicken with sliced avocados, cherry tomatoes, shredded cheese, and desired toppings.
  5. Serve immediately and enjoy!

Notes

For extra flavor, add a squeeze of lime and fresh cilantro before serving.
