Ingredients
  

Protein
  • 2 pieces boneless, skinless chicken breasts
Vegetables
  • 2 medium sweet potatoes, peeled and cubed
Fats & Oils
  • 2 tablespoons olive oil
Spices & Seasonings
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • to taste salt and pepper
Greens & Toppings
  • 4 cups fresh spinach or mixed greens
  • 1 piece avocado, sliced
  • 1/4 cup feta cheese (optional)
  • 1 tablespoon balsamic vinegar (optional)

Method
 

  1. Preheat grill to medium-high. Toss sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, salt, and pepper.
  2. Roast sweet potatoes at 400°F (200°C) for 25-30 mins, tossing halfway. Season chicken with remaining olive oil, salt, and pepper, then grill 6-7 mins per side.
  3. Let chicken rest, then slice. Combine sweet potatoes, chicken, and greens in a bowl.
  4. Top with sliced avocado, feta, and drizzle with balsamic vinegar before serving.

Notes

For extra flavor, marinate chicken beforehand or add your favorite herbs.
