- Preheat grill to medium-high. Toss sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, salt, and pepper.
- Roast sweet potatoes at 400°F (200°C) for 25-30 mins, tossing halfway. Season chicken with remaining olive oil, salt, and pepper, then grill 6-7 mins per side.
- Let chicken rest, then slice. Combine sweet potatoes, chicken, and greens in a bowl.
- Top with sliced avocado, feta, and drizzle with balsamic vinegar before serving.
Notes
For extra flavor, marinate chicken beforehand or add your favorite herbs.
