Ingredients
  

Marinade
  • 1 kg chicken thighs, cubed
  • 2 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp coconut cream
  • 2 tbsp sugar
  • 1 tbsp oyster sauce
Glaze
  • 6 tbsp coconut cream
  • 1.5 tbsp honey
  • 1 tsp soy sauce
Peanut Sauce
  • 2 tbsp coconut cream
  • 0.25 cup natural peanut butter
  • 1 tsp rice vinegar
  • 1 tsp Thai red curry paste
  • 2 tsp maple syrup
  • 2 tsp soy sauce
  • 2-3 tbsp water
  • 1 tsp sesame oil (optional)
  • Crushed peanuts for garnish

Method
 

  1. Cut chicken into 1-inch cubes. Mix all marinade ingredients.
  2. Coat chicken thoroughly. Let sit 30 minutes to 4 hours.
  3. Thread chicken with small gaps between pieces.
  4. Whisk coconut cream, honey, and soy sauce until smooth.
  5. Cook 4-5 minutes per side on medium-high heat.
  6. Brush with glaze after flipping and again before serving.
  7. Let cool 2-3 minutes. Serve with peanut sauce if desired.

Notes

For best results, marinate the chicken overnight. Serve with a side of rice and steamed vegetables.
