Method
- Cut chicken into 1-inch cubes. Mix all marinade ingredients.
- Coat chicken thoroughly. Let sit 30 minutes to 4 hours.
- Thread chicken with small gaps between pieces.
- Whisk coconut cream, honey, and soy sauce until smooth.
- Cook 4-5 minutes per side on medium-high heat.
- Brush with glaze after flipping and again before serving.
- Let cool 2-3 minutes. Serve with peanut sauce if desired.
Notes
For best results, marinate the chicken overnight. Serve with a side of rice and steamed vegetables.
