  • 2 tablespoons olive oil
  • 1 lb lean ground beef
  • 1 medium yellow onion diced
  • 1 red bell pepper diced
  • 1.5 lbs Yukon gold potatoes peeled and cubed
  • 1 cup beef stock or water
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 –3 green onions chopped
Spices
  • 1 tablespoon cumin divided
  • 2 teaspoons paprika divided
  • 2 teaspoons dried thyme divided
  • 1 teaspoon garlic powder divided
  • 1 teaspoon salt divided
  • 0.5 teaspoon black pepper divided

Method
 

  1. Cook the Beef: Heat olive oil, add ground beef, season with half the spices, and cook until browned. Transfer to a plate.
  2. Cook the Potatoes: Add potatoes to the skillet, season with remaining spices, pour in beef stock, cover, and cook until tender.
  3. Saute Vegetables: Add onion and red bell pepper to the skillet with the potatoes. Saute until softened.
  4. Combine and Finish: Return the cooked ground beef to the skillet. Stir in Worcestershire sauce and Dijon mustard.
  5. Garnish and Serve: Sprinkle with chopped green onions and serve warm.

Notes

For a richer flavor, use bone broth instead of beef stock.
