Method
- Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
- Dice potatoes into ½-inch cubes. Toss with salt and pepper. Set aside.
- Heat olive oil in a skillet over medium heat. Sauté onions until soft. Add garlic and cook until fragrant. Transfer to a bowl.
- In the same skillet, add ground beef. Cook over medium-high heat, breaking it up, until browned. Season with salt, pepper, and paprika. Drain excess grease.
- Layer half of the potatoes in the dish.
- Add half of the cooked beef.
- Sprinkle half of the onion mixture.
- Top with 1⅓ cups cheese.
- Repeat layers with remaining potatoes, beef, and onions.
- Pour beef broth evenly over the casserole.
- Bake covered with foil for 40 minutes.
- Remove foil, sprinkle remaining cheese over the top, and bake uncovered for 10–15 minutes until bubbly and golden.
- Let rest 5–10 minutes before serving.
Notes
For a richer flavor, use smoked paprika. You can also add other vegetables like bell peppers or mushrooms.
