  • 2 lbs lean ground beef 90/10
  • 8 medium russet potatoes scrubbed and diced (½-inch cubes)
  • 2 medium yellow onions chopped
  • 6 cloves garlic minced
  • 4 cups shredded sharp cheddar cheese divided
  • 2 cups low-sodium beef broth
  • 4 teaspoons olive oil
  • 2 teaspoons paprika smoked paprika optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  2. Dice potatoes into ½-inch cubes. Toss with salt and pepper. Set aside.
  3. Heat olive oil in a skillet over medium heat. Sauté onions until soft. Add garlic and cook until fragrant. Transfer to a bowl.
  4. In the same skillet, add ground beef. Cook over medium-high heat, breaking it up, until browned. Season with salt, pepper, and paprika. Drain excess grease.
  5. Layer half of the potatoes in the dish.
  6. Add half of the cooked beef.
  7. Sprinkle half of the onion mixture.
  8. Top with 1⅓ cups cheese.
  9. Repeat layers with remaining potatoes, beef, and onions.
  10. Pour beef broth evenly over the casserole.
  11. Bake covered with foil for 40 minutes.
  12. Remove foil, sprinkle remaining cheese over the top, and bake uncovered for 10–15 minutes until bubbly and golden.
  13. Let rest 5–10 minutes before serving.

Notes

For a richer flavor, use smoked paprika. You can also add other vegetables like bell peppers or mushrooms.
