Ingredients
  

Meat and Vegetables
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1.5 teaspoons dried Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1.5 cups basmati rice
  • 2.5 cups low-sodium beef broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon white vinegar
  • 2 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley or thyme for garnish

Method
 

  1. Preheat oven to 375°F. Brown beef with onion and mushrooms until cooked, about 8–10 minutes.
  2. Stir in garlic, Italian seasoning, salt, and pepper; cook 1 minute.
  3. If ovenproof, sprinkle rice over beef mixture; else transfer to a casserole dish and spread rice on top.
  4. Heat broth with butter and vinegar; pour over rice and beef. Cover tightly with foil.
  5. Bake for 30–35 minutes, then let sit covered for 10 minutes. Remove foil, top with cheese, and bake 5–7 minutes until melted.

Notes

Use a ovenproof skillet if available for easier cooking.
