Method
- Brown ground beef in olive oil; drain fat.
- Add onions, bell peppers, and garlic; cook until softened. Stir in chili powder, cumin, salt, and pepper.
- Add rice, diced tomatoes, and beef broth; stir well.
- Bring to a boil, then simmer covered for 15 minutes, or until rice is cooked.
Notes
For a spicier dish, add a pinch of red pepper flakes.
