  • 2 cups beef broth
  • 1 cup diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

  • 2 tablespoons olive oil

Method
 

  1. Brown ground beef in olive oil; drain fat.
  2. Add onions, bell peppers, and garlic; cook until softened. Stir in chili powder, cumin, salt, and pepper.
  3. Add rice, diced tomatoes, and beef broth; stir well.
  4. Bring to a boil, then simmer covered for 15 minutes, or until rice is cooked.

Notes

For a spicier dish, add a pinch of red pepper flakes.
