  • 1 lb Ground Beef
Vegetables
  • 1 tbsp Olive Oil
  • 1 Onion diced
  • 1 Green Bell Pepper diced
Seasoning
  • 1 packet Taco Seasoning
Base
  • 1 cup Cooked Rice (white or brown)
Toppings
  • 1 can Black Beans rinsed and drained
  • 1 cup Corn (fresh, frozen, or canned)
  • 0.5 cup Salsa
  • 0.25 cup Shredded Cheddar Cheese

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up, until browned.
  3. Drain any excess grease.
  4. Add diced onion and bell pepper and cook until softened, about 5 minutes.
  5. Stir in taco seasoning and follow package directions, adding water if needed.
  6. Simmer for 5 minutes, stirring occasionally.
  7. Assemble bowls: Start with a base of cooked rice.
  8. Top with seasoned ground beef, black beans, corn, and salsa.
  9. Sprinkle with shredded cheddar cheese and any desired toppings.
  10. Serve immediately.
