Ingredients
  

Ground Beef Mixture
  • 1 lb lean ground beef 90/10 lean is recommended
  • 2 tbsp taco seasoning Store-bought or homemade
  • 1/4 cup water
Rice
  • 1 cup uncooked white rice Or brown rice
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp fresh lime juice
Toppings
  • 15 oz black beans Rinsed and drained
  • 15 oz corn Drained
  • 2 cups shredded romaine lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese Or Mexican blend
  • 1 avocado Sliced or diced
Optional Toppings
  • Salsa, sour cream, and jalapeƱos for topping

Method
 

  1. Cook rice, then stir in cilantro and lime juice. Set aside.
  2. Cook ground beef until browned, drain excess fat.
  3. Stir in taco seasoning and water, simmer until thickened.
  4. Divide rice among bowls. Top with beef, beans, corn, lettuce, tomatoes, cheese, and avocado. Add optional toppings. Serve.
