Ingredients
  

Meat
  • 1 lb lean ground beef
  • 8 flour or corn tortillas tortillas
  • 2 cups enchilada sauce store-bought or homemade
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
Toppings
  • Sour cream Sour cream for topping

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook beef and onions until translucent (5-7 min), then add garlic, cumin, and chili powder; sauté 1 min.
  3. Spread beef mixture on tortillas, roll up, and place seam-side down in a greased dish.
  4. Pour enchilada sauce over tortillas and sprinkle with cheese.
  5. Bake uncovered for 20-25 minutes until bubbly and golden.

Notes

For a spicier version, add some chopped jalapeños to the beef mixture.
