Method
- Preheat oven to 375°F (190°C).
- Cook beef and onions until translucent (5-7 min), then add garlic, cumin, and chili powder; sauté 1 min.
- Spread beef mixture on tortillas, roll up, and place seam-side down in a greased dish.
- Pour enchilada sauce over tortillas and sprinkle with cheese.
- Bake uncovered for 20-25 minutes until bubbly and golden.
Notes
For a spicier version, add some chopped jalapeños to the beef mixture.
