Method
- Preheat oven to 375°F (190°C).
- Cook beef with onions until browned (5-7 min). Add garlic, cumin, chili powder; sauté 1 min.
- Fill tortillas with beef mixture, roll, and place seam-side down in a greased dish.
- Pour enchilada sauce over tortillas and sprinkle with cheese.
- Bake uncovered for 20-25 minutes until bubbly and golden.
Notes
For extra flavor, add chopped cilantro or sliced jalapeños before baking.
