  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 10 ounce enchilada sauce
  • 15 ounce black beans, rinsed and drained
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 12 corn tortillas
  • Olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Brown ground beef in a skillet, drain grease.
  3. Add onion and bell pepper, cook until softened (5 min).
  4. Stir in enchilada sauce, black beans, and corn. Season with salt and pepper. Simmer for 5 minutes.
  5. Lightly oil a 9x13 inch baking dish.
  6. Warm tortillas to make them pliable.
  7. Spoon beef mixture into each tortilla, roll up, and place seam-side down in the dish.
  8. Pour remaining enchilada sauce over enchiladas.
  9. Sprinkle with cheddar cheese.
  10. Bake for 20-25 minutes, until cheese is melted and bubbly.
  11. Let cool slightly before serving.

Notes

For a spicier kick, add a pinch of cayenne pepper to the beef mixture!
