Method
- Preheat oven to 350 degrees F (175 degrees C).
- Brown ground beef in a skillet, drain grease.
- Add onion and bell pepper, cook until softened (5 min).
- Stir in enchilada sauce, black beans, and corn. Season with salt and pepper. Simmer for 5 minutes.
- Lightly oil a 9x13 inch baking dish.
- Warm tortillas to make them pliable.
- Spoon beef mixture into each tortilla, roll up, and place seam-side down in the dish.
- Pour remaining enchilada sauce over enchiladas.
- Sprinkle with cheddar cheese.
- Bake for 20-25 minutes, until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
For a spicier kick, add a pinch of cayenne pepper to the beef mixture!
