- Dice potatoes, rinse, and pat dry.
- Brown potatoes in olive oil, then set aside.
- Brown ground beef and drain excess fat.
- Cook onion and garlic with the beef.
- Season with paprika, oregano, salt, and pepper. Add tomato paste.
- Add beef broth, scrape browned bits, return potatoes, and simmer covered.
- Adjust seasoning, let stand, and garnish with parsley.
Notes
For a richer flavor, use bone broth instead of regular beef broth.
