  • 1 pound ground beef 80/20 blend recommended for optimal flavor and moisture
  • 3 medium russet potatoes peeled and diced into 1-inch cubes
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt adjust to taste
  • 0.25 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 0.5 cup beef broth or water
  • Chopped fresh parsley for garnish (optional but recommended)

Method
 

  1. Dice potatoes, rinse, and pat dry.
  2. Brown potatoes in olive oil, then set aside.
  3. Brown ground beef and drain excess fat.
  4. Cook onion and garlic with the beef.
  5. Season with paprika, oregano, salt, and pepper. Add tomato paste.
  6. Add beef broth, scrape browned bits, return potatoes, and simmer covered.
  7. Adjust seasoning, let stand, and garnish with parsley.

Notes

For a richer flavor, use bone broth instead of regular beef broth.
