  • 1 pound ground beef
  • 2 medium zucchinis diced
  • 1 large sweet potato peeled and cubed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • to taste Salt and black pepper
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in skillet over medium heat. Sauté onion and garlic for 2-3 minutes.
  2. Add ground beef, breaking it apart. Brown for 5-7 minutes. Drain excess grease.
  3. Stir in sweet potato, paprika, oregano, salt, and pepper. Cover and cook for 10 minutes, stirring occasionally.
  4. Add zucchini and cook uncovered for 5 minutes.
  5. Remove from heat and garnish with parsley. Serve warm.

Notes

Adjust seasoning to your preference. For a spicier dish, add a pinch of red pepper flakes.
