  • 1 pound ground turkey
Vegetables
  • 2 medium zucchinis zucchinis trimmed and sliced
  • 1 tablespoon olive oil
  • 1/2 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Heat olive oil in a skillet, sauté onion until soft, then add garlic and cook briefly.
  2. Add ground turkey, cook until browned, then stir in zucchini slices and cook until tender.
  3. Season with oregano, salt, pepper, red pepper flakes, then pour in chicken broth and simmer for a few minutes.
  4. Sprinkle Parmesan cheese over the mixture, stir until melted, and serve hot.

Notes

For extra flavor, garnish with fresh herbs or additional Parmesan.
