  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Chop the onion.
  3. Sauté onion until soft, about 3-4 minutes.
  4. Mince the garlic cloves.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Crumble ground turkey into the skillet.
  7. Cook turkey for 6-8 minutes until browned.
  8. Wash the zucchinis.
  9. Trim and halve zucchinis lengthwise.
  10. Slice zucchini into half-moon shapes.
  11. Add zucchini to the skillet with turkey.
  12. Cook zucchini for 4-5 minutes, until softened.
  13. Sprinkle oregano, salt, pepper, and red pepper flakes.
  14. Pour in chicken broth and stir.
  15. Simmer for 3-4 minutes.
  16. Sprinkle Parmesan cheese over the skillet.
  17. Stir until cheese melts.
  18. Adjust seasoning to taste.
  19. Serve immediately.

Notes

For a spicier dish, add more red pepper flakes or a dash of hot sauce.
