Method
- Heat olive oil in a large skillet over medium heat.
- Chop the onion.
- Sauté onion until soft, about 3-4 minutes.
- Mince the garlic cloves.
- Add garlic and cook for 30 seconds until fragrant.
- Crumble ground turkey into the skillet.
- Cook turkey for 6-8 minutes until browned.
- Wash the zucchinis.
- Trim and halve zucchinis lengthwise.
- Slice zucchini into half-moon shapes.
- Add zucchini to the skillet with turkey.
- Cook zucchini for 4-5 minutes, until softened.
- Sprinkle oregano, salt, pepper, and red pepper flakes.
- Pour in chicken broth and stir.
- Simmer for 3-4 minutes.
- Sprinkle Parmesan cheese over the skillet.
- Stir until cheese melts.
- Adjust seasoning to taste.
- Serve immediately.
Notes
For a spicier dish, add more red pepper flakes or a dash of hot sauce.
