- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey, salt, pepper, garlic powder, and onion powder. Cook until browned, breaking up the turkey.
- Add chopped onion and minced garlic. Cook until softened, about 3-5 minutes.
- Add chopped zucchini and diced tomatoes (with juice). Stir to combine.
- Bring to a simmer, then reduce heat to medium-low. Cover and cook for 10-15 minutes, or until zucchini is tender.
- Stir in fresh parsley (if using) and red pepper flakes (if using).
- Serve immediately.
Notes
For a spicier dish, add more red pepper flakes or a dash of hot sauce.
