  • 1 pound ground turkey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/4 cup chopped fresh parsley (optional)
  • Red pepper flakes (optional, to taste)

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey, salt, pepper, garlic powder, and onion powder. Cook until browned, breaking up the turkey.
  3. Add chopped onion and minced garlic. Cook until softened, about 3-5 minutes.
  4. Add chopped zucchini and diced tomatoes (with juice). Stir to combine.
  5. Bring to a simmer, then reduce heat to medium-low. Cover and cook for 10-15 minutes, or until zucchini is tender.
  6. Stir in fresh parsley (if using) and red pepper flakes (if using).
  7. Serve immediately.

Notes

For a spicier dish, add more red pepper flakes or a dash of hot sauce.
