for the cupcakes
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
for the blood red filling
  • 1 cup raspberry or strawberry jam
  • optional fresh raspberries for garnish for decoration
for the frosting
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a cupcake pan.
  2. Mix dry ingredients, then combine with wet ingredients and bake for 18-20 minutes.
  3. Heat jam, core cupcakes, fill with jam, then prepare frosting and frost cupcakes.

Ensure cupcakes are fully cooled before filling and frosting for best results.
