  • 1 lb ground beef (80/20 blend)
  • 2 cups green beans trimmed (fresh or thawed frozen)
  • 1 cup diced onion yellow or white
  • 1 cup sliced button or baby bella mushrooms
  • 3 tsp minced garlic fresh
  • 0.25 cup low-sodium beef or chicken broth
  • 0.33 cup full-fat sour cream
  • 2 Tbsp cream cheese room temperature
  • 0.5 tsp sea salt or to taste
  • 0.5 tsp freshly ground black pepper
  • 0.5 tsp Worcestershire sauce
  • 0.125 tsp dried thyme
  • 2 cups shredded Colby Jack cheese use 1 cup for lighter version

Method
 

  1. Brown the Beef
  2. Heat skillet, cook beef ~5 min, breaking it up, until no pink remains. Drain, reserving 1 Tbsp fat; set beef aside.
  3. Sauté Aromatics
  4. In the reserved fat, cook onion 3–4 min until translucent. Add mushrooms; sauté 2 min until they begin to caramelize.
  5. Add Beans & Seasonings
  6. Stir in green beans, garlic, and broth. Cook 2–3 min until beans turn bright green and remain crisp-tender.
  7. Create Creamy Base
  8. Reduce heat. Melt in cream cheese, stirring until smooth. Blend in sour cream to form a creamy sauce.
  9. Combine & Season
  10. Return beef to skillet. Add salt, pepper, Worcestershire sauce, and thyme. Stir gently until everything is evenly coated.
  11. Cheese Topping
  12. Sprinkle Colby Jack evenly over the surface.
  13. Melt & Serve
  14. Option A (broiler): Place skillet under broiler 1–2 min until cheese is golden and bubbly.
  15. Option B (stovetop): Cover and cook on low 3–4 min until cheese melts. Serve hot.

Notes

For a spicier kick, add a pinch of red pepper flakes along with the other seasonings.
