Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes, peeled and cubed
  • 1/4 cup almond milk (or any milk of choice)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/4 cup chopped pecans or walnuts
  • 2 tablespoons coconut oil or unsalted butter, melted
  • 2 tablespoons brown sugar (optional, for topping)

Method
 

  1. Preheat oven to 375°F (190°C). Boil sweet potatoes until tender, then mash.
  2. Mix mashed sweet potatoes with almond milk, maple syrup, vanilla, cinnamon, nutmeg, and salt.
  3. Transfer mixture to a greased baking dish. Combine oats, nuts, melted oil, and brown sugar for topping.
  4. Sprinkle topping over the casserole and bake for 25-30 minutes until golden.
  5. Let cool briefly before serving.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
