Ingredients
  

Dry ingredients
  • 1 1/2 cups gluten-free oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet ingredients
  • 2 ripe bananas mashed bananas
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons olive oil
Optional add-ins
  • 1/4 cup chopped nuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine dry ingredients: oats, baking powder, baking soda, and salt.
  3. In another bowl, mash bananas and mix in honey, almond milk, and olive oil.
  4. Combine wet and dry ingredients until just mixed, then fold in optional add-ins.
  5. Divide batter evenly into muffin cups and bake for 20 minutes or until golden.

Notes

For extra flavor, add a dash of cinnamon or vanilla extract.
