  • 2 pieces ripe bananas
  • 1 cup rolled oats
  • 2 large eggs
  • 1 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • A pinch salt
  • to taste Maple syrup for serving

Method
 

  1. Blend bananas, oats, eggs, almond milk, baking powder, cinnamon, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease.
  3. Pour 1/4 cup batter for each pancake; cook 2-3 minutes until bubbles form, then flip and cook 2-3 minutes more.
  4. Transfer pancakes to a plate, keep warm, and repeat with remaining batter.
  5. Stack pancakes, drizzle with maple syrup, and serve.

Notes

For extra flavor, add a handful of blueberries or nuts to the batter.
