Method
- Preheat grill to medium-high. Combine chicken with oil, BBQ sauce, garlic powder, paprika, salt, and pepper. Coat fully.
- Grill chicken 6-8 minutes per side, until cooked to 165°F (74°C). Rest 5 minutes, then chop.
- Combine lettuce, tomatoes, cucumber, red onion, and corn in a large bowl.
- Add chopped BBQ chicken to the salad. Toss gently.
- Add diced avocado and chopped cilantro.
- Drizzle with vinaigrette just before serving. Toss gently.
- Enjoy immediately.
