Ingredients
  

Chicken & Marinade
  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce ensure permissible ingredients
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
Salad
  • 8 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup corn kernels fresh or frozen
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup light vinaigrette dressing

Method
 

  1. Preheat grill to medium-high. Combine chicken with oil, BBQ sauce, garlic powder, paprika, salt, and pepper. Coat fully.
  2. Grill chicken 6-8 minutes per side, until cooked to 165°F (74°C). Rest 5 minutes, then chop.
  3. Combine lettuce, tomatoes, cucumber, red onion, and corn in a large bowl.
  4. Add chopped BBQ chicken to the salad. Toss gently.
  5. Add diced avocado and chopped cilantro.
  6. Drizzle with vinaigrette just before serving. Toss gently.
  7. Enjoy immediately.

Adjust the amount of BBQ sauce and vinaigrette to your liking for desired flavor intensity.
