  • 2 large chicken breasts, cooked and diced
Vegetables
  • 4 cups broccoli florets, steamed
Grains
  • 2 cups cooked brown rice
Dairy & Eggs
  • 1 cup greek yogurt
  • 1 cup shredded cheddar cheese
Other
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon paprika
  • 2 tablespoons chopped parsley (for garnish)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook onion and garlic in olive oil until softened, about 3-4 minutes.
  3. Mix Greek yogurt, chicken broth, half cheese, salt, pepper, and paprika to make sauce.
  4. Combine chicken, broccoli, rice, and sautéed onions; add sauce and mix.
  5. Transfer to a greased dish, top with remaining cheese, and bake 20-25 minutes.
  6. Garnish with parsley before serving.

Notes

For extra flavor, add a pinch of red pepper flakes.
