Ingredients
  

Pasta and Vegetables
  • 8 oz whole wheat pasta
  • 2 cups broccoli florets
  • 1 lb boneless, skinless chicken breast, diced
  • 2 cups low-sodium chicken broth
  • 1 cup plain Greek yogurt
  • 1 cup shredded low-fat mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp Italian seasoning
  • to taste N/A Salt and pepper

Method
 

  1. Preheat oven to 350°F (175°C). Cook pasta, then drain.
  2. Cook chicken and garlic in olive oil until no longer pink; add broccoli and cook 3-4 minutes.
  3. Mix pasta, chicken mixture, broth, yogurt, Italian seasoning, salt, and pepper.
  4. Transfer to a greased baking dish, top with cheeses, and bake 25-30 minutes until bubbly and golden.

Notes

For extra flavor, add a pinch of red pepper flakes.
