Ingredients
  

Cooked Rice
  • 2 cups cooked brown rice
  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup broccoli florets
  • 1 cup low-sodium chicken broth
  • 1 cup Greek yogurt
  • 1 cup shredded low-fat cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme (optional)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook diced chicken in olive oil until browned, about 5-7 minutes.
  3. Mix cooked rice, chicken, broccoli, broth, yogurt, half the cheese, garlic, onion, salt, pepper, and thyme in a bowl.
  4. Transfer mixture to a greased 9x13 inch dish, top with remaining cheese, cover with foil, and bake 25 minutes.
  5. Remove foil and bake 10-15 minutes until bubbly and golden. Cool slightly before serving.

Notes

You can add more vegetables or adjust seasonings to taste.
