Method
- Preheat oven to 375°F (190°C).
- Cook diced chicken in olive oil until browned, about 5-7 minutes.
- Mix cooked rice, chicken, broccoli, broth, yogurt, half the cheese, garlic, onion, salt, pepper, and thyme in a bowl.
- Transfer mixture to a greased 9x13 inch dish, top with remaining cheese, cover with foil, and bake 25 minutes.
- Remove foil and bake 10-15 minutes until bubbly and golden. Cool slightly before serving.
Notes
You can add more vegetables or adjust seasonings to taste.
